With schools opening I think most moms are racking our brains for fun snacks to put in lunchboxes. My son is an extremely picky eater, luckily we home school so we get to make yummy treats together.
Here’s a lovely easy flapjack recipe that is super easy and great for breakfast and even lunchboxes. Add some fresh berries or banana and you have a yummy healthy treat.
Ingredients:
- 3/4 cup cake flour
- 2 tsp baking powder
- 1 pinch of salt
- 1 large egg
- 2 Tbsp sugar
- 1/2 cup of milk
- 1 Tbsp butter (melted)
- Jam or marmalade (for serving),
- Whipped cream or ice-cream (optional)
Instructions:
- Sift the flour, baking powder and a pinch of salt (about 1 ml) together in a medium mixing bowl.
- Make a well in the middle.
- Beat the egg and sugar together in a smaller mixing bowl and add the milk.
- Add the egg and milk mixture to the well in the flour mixture and blend well to form a smooth batter.
- Lightly grease the bottom of a heavy based frying pan with butter.
- Heat the pan to medium heat.
- Blob tablespoons of batter into the pan about 2 cm apart.
- Fry the flapjacks on medium heat for about 2 minutes on one side or until the top is full of air bubbles. The bottom should be golden brown.
- Turn and fry for another minute on the other side.
- Let them cool slightly and service with jam, whipped cream or ice-cream. Add berries or banana for a extra taste of yummy.
